Tonight I made soup.

We recently joined a food co-op which left us with a lot of fruits and vegetables we haven’t used before. One of those was celeriac or celery root. I looked up a recipe in Mark Bitman’s How to Cook Everything Vegetarian (which is my favorite cookbook of all time) and found a great basic soup recipe in which you could use pretty much any/ all root vegetables you have available.

I used celeriac, potatoes, carrots, onions and garlic – all from the co-op delivery.

I sauteed them in BUTTER until the carrots were soft, then added stock, salt, pepper and a teeeeeeny bit of agave nectar. I cooked this for about 20 minutes.

I prefer pureed soups – just put it in the blender.

    that soups sounds lovely. i love agave nectar, however i have never cooked with it; i only have made tea with it. hmm. . . . and i am so jealous, a food co-op. i would love to join one, well if i had any time to cook that is!
